For those who are only English speaking but have recovered the Luxembourg nationality, what are the job prospects like in Luxembourg? I assume that knowledge of French is essential, but many who have recovered the Luxembourg nationality do not speak French (especially American Luxembourgers).
So, I am kind of curious, are there job for Anglophones in Luxembourg? Would one need native level French and German to find full-time employment in Luxembourg?

I don't know about the job opportunities in Luxembourg. I assume it will have a lot to do with your field of knowledge.
However, remember that as a Luxembourg citizen, you'll be a member of the EU, and you'll be able to work in many European countries, including the UK and Ireland.

I feel as though it would not be too hard to find a job anywhere in Europe while knowing only English considering English is pretty much a second language for every country.

That is not so true. English is widely spoken in capital cities across Europe, but if you go elsewhere it will be a challenge to find a job if you only speak English. Luxembourg is very international so this wouldn't be a problem here.

Lots of work available if you speak only English, don't worry about this! Good to know!! Even though I am moving to Lux to study, I always check websites as monster.lu or jobfinder.lu and never found anything suitable for me. Most really demand at least English and French or English and German. Some ask for English, French and German (Luxembourgish will be considered an asset). At least for what I have always studied in life I will have to learn the three official languages. Which will be a pleasure, by the way.

That is good to know, but, as someone pointed out, with Luxembourg citizenship we can work anywhere in the EU.

I also noticed that as soon as I went outside of Luxembourg City, people generally did not speak English when I approached them, or they simply refused to speak English. They only spoke French to me.

William, languages in Luxembourg have always been a controversial issue! Luxembourgers people speak Luxembourgish and would like that everyone here could speak it as well. But the fact Luxembougers also speak fluent French, German and very often English plus the fact everything is written on French and German plus the fact that if you'd live in the city you will notice that the population is very very international, well all this make it difficult to learn the language because you will not have to use it as for instance if you d move to France where you can't really get around with no French! This being said, there is a vibrant English speaking community here, and a big proportion of them speak nothing but English and find their way around just fine!
